Lukter: An Arunachal Delicacy.


 Lukter

Lukter is a spicy, flavorful side dish of cooked meat and chili flakes that originated in Arunachal Pradesh, India. 
That's really interesting! Different tribes in Arunachal Pradesh have their own versions of Lukter, with unique names:
Galo Tribe – Lukter
Nyishi Tribe – Yamter
Apatani Tribe – Yormii
 It's often made with beef or pork, chicken, and is commonly eaten with rice.
Lukter is cooked dry meat mixed with chili flakes. It is very flavourful and on well demand in the state. It is meant to be eaten as a side dish. The chili used in preparing Lukter is usually the ghost pepper or commonly known as the Bhut Jolokia. The locals here have an affinity for spicy food, due to which cuisines such as Lukter contain a good amount of heat. Due to its popularity, Lukter is also available in the marketplace packed in bottles and zip bags. 
It is usually stored in a container and lasts for a long time without getting spoilt. It is something which every local takes with them to wherever they go; may it be a hostel or outstation. It is believed that it even turns the not-so-very tasty food to something so delicious.

Ingredients:

Chicken – 250 grams (cut into small pieces). 
Dried chilies – 250 grams (preferably Bhut Jolokia or any spicy variety). 
Salt – As per taste. 
Oil – For frying

Instructions: 

  • Prepare the Chilies:
  • Dry roast the dried chilies in a pan on low heat until they become crisp.
  • Let them cool, then crush or grind them into coarse chili flakes. Set aside.


1. Cook the Chicken:
•Add water and boil the chicken until tender. 
•Shred the chicken and remove bones. 
•Heat oil in a pan.
•Add the chicken pieces and fry them on medium heat until they turn golden brown and fully cooked.

2. Combine the Ingredients:
•Once the chicken is cooked, add the crushed chili flakes to the pan.
•Sprinkle salt as per taste and mix well to coat the chicken evenly with the chili.

3. Final Touch:
•Stir-fry for another 2–3 minutes on low heat to let the flavors blend.
•Turn off the heat and let it rest for a minute.

4. Serve:
•Lukter is best enjoyed as a side dish with steamed rice.
