Ingredients:

2 cups cooked rice (preferably day-old, chilled)

2 tbsp vegetable oil
½ cup peas and carrots (or mixed vegetables)
2 eggs, beaten
2 green onions, chopped
2 cloves garlic, minced
1 tsp ginger, minced
Salt and pepper to taste.

Step-by-Step Instructions:

1. Cook the Pork

If using raw pork, heat 1 tbsp oil in a large wok or pan over medium-high heat.
Add the diced or sliced pork, stirring occasionally, until it browns and cooks through (~5-7 minutes).
If using pre-cooked pork (leftover roast pork, BBQ pork, etc.), simply warm it up in the pan for 2-3 minutes. Tip: Marinate the pork beforehand with soy sauce, a pinch of sugar, and cornstarch for extra flavor and tenderness. Remove the pork from the pan and set aside.

2. Scramble the Eggs

7. Combine Everything
Add back the cooked pork and scrambled eggs.
Mix everything together, ensuring all ingredients are evenly distributed.
Stir-fry for another 2 minutes until well combined.
Tip: If the rice looks dry, add a little more soy sauce or a splash of chicken broth.

8. Finish with Green Onions
Stir in the chopped green onions just before serving.
