  • Chicken – 500g (bone-in or boneless, cut into pieces)

  • Green chili – 1-2 (optional, for spice)

  • Oil – 2-3 tablespoons

  • Water – as needed

  • Fresh coriander leaves – for garnish

  • Salt – to taste

Spices:

  • Turmeric – ½ teaspoon

  • Red chili powder – 1 teaspoon (adjust to taste)

  • Coriander powder – 1 teaspoon

  • Cumin powder – 1 teaspoon

  • Garam masala – 1 teaspoon

How to Make Chicken Curry (In Simple Steps)

  1. Heat some oil in a pan. Once it’s hot, add the chopped onions and cook them until they turn golden brown.

  2. Add the ginger-garlic paste and stir for a minute or two, just until the raw smell disappears.

  3. Now, toss in the chopped tomatoes and cook until they become soft and mushy.

  4. Time to add the spices — turmeric, red chili powder, coriander powder, cumin powder, and some salt. Mix everything well and let it cook until you see the oil starting to separate from the masala. That means it's ready!

  5. Add the chicken pieces to the pan. Stir them well so they're nicely coated in the masala.

  6. Let the chicken cook on medium heat for about 5 to 7 minutes, until it changes color and starts to look cooked on the outside.

  7. Pour in water (around 1 to 1.5 cups — more if you want extra gravy). Cover the pan and let it simmer for 20–25 minutes, or until the chicken is tender and fully cooked.

  8. Sprinkle some garam masala on top and let it simmer for a couple more minutes for extra flavor.

  9. Finally, garnish with fresh coriander leaves.
