Ingredients
-
1 whole chicken (about 3 pounds)
-
4 carrots, cut in half
-
4 celery stalks, halved
-
1 large onion, halved
-
Water (enough to cover everything in the pot)
-
Salt and pepper, to taste
-
1 teaspoon chicken bouillon granules (optional, for extra flavor)
-
Get everything ready:
Gather your ingredients. Place the chicken, carrots, celery, and onion into a large soup pot. Add enough cold water to cover it all. -
Make the broth:
Bring the pot to a boil over medium heat. Once it’s bubbling, reduce the heat and let it gently simmer (uncovered) for about 90 minutes. Skim off any foam that rises to the top every now and then. -
Cool and shred the chicken:
When the chicken is cooked and falling off the bone, take it out and let it cool slightly. Once it’s safe to handle, remove the skin and bones, and chop the meat into bite-sized pieces. -
Strain and chop the veggies:
Strain out the vegetables, but save that golden broth! Rinse out the pot, return the broth, and chop the veggies into smaller pieces if you'd like. -
Bring it all back together:
Add the chopped chicken and veggies back into the pot. Warm it through over low heat, then season to taste with salt, pepper, and bouillon if using. -
Serve and enjoy:
Ladle the soup into bowls, maybe sprinkle with some fresh parsley or a little parmesan. Serve it with crackers or bread for extra coziness.
