Naga Pork Curry

Pork curry is a favorite dish in the Northeast, and each state — even each tribe — has its own unique way of cooking it. This particular pork curry comes from Nagaland, though it's also made in other nearby states. Ingredients for Naga Pork Curry 

  • 500 gm of pork

  • 25 gm of ginger

  • 2 onions

  • 2 teaspoons of salt

  • 25 gm of garlic

  • 10 dried red chilies

  • 1/2 tablespoon of red chili powder

Step 1:
Start by making the curry paste. Grind the ginger and garlic together until you get a smooth paste. While you're doing that, cut the pork into medium-sized pieces, wash them well, and make sure they’re dried properly.
Step 2:
Now, put the pork in a pressure cooker and cook it on medium heat. Stir the pork occasionally to make sure it doesn’t stick to the bottom of the cooker. Do this for about 3 minutes, then add the salt and give the meat another good stir.
Step 3:
Next, add the chopped onions and stir-fry for about a minute. Then, add the ginger-garlic paste, sliced bamboo shoots, and chopped red chilies (use 2 King Chilies if you have them). Stir everything gently for 5 minutes. Once it’s all mixed well, cover the cooker, but don’t close the lid completely. Let it cook for another 3 minutes.
Step 4:
Now, add the red chili powder to give the curry a nice color, and stir for another 5 minutes. After that, pour in about a cup of water and close the lid of the pressure cooker. Let it cook until it whistles 6 times, then turn off the flame. Its ready to serve with rice.
