Vegetables Salad

A vegetable salad is a colorful and nutritious dish made from a variety of fresh vegetables, either raw or lightly cooked. It is often served as a side dish or appetizer and complements many types of meals. In many parts of India, especially in the Northeastern states like Arunachal Pradesh, a simple vegetable salad is commonly served with the main meal, adding freshness, texture, and health benefits to the plate.  A typical vegetable salad in Arunachal Pradesh—and many other parts of India—is made using simple, fresh ingredients that are easy to find locally: Leafy greens like lettuce, spinach, or even locally grown greens form the base. They're light, refreshing, and packed with nutrients. Fresh vegetables such as cucumber, tomato, carrot, onion, radish, and green chilies add crunch, color, and a burst of flavor. People often throw in a few extras depending on what’s available—boiled potatoes for a soft bite, beetroot for its earthy sweetness, cabbage for extra crunch, or bell peppers for a hint of sweetness. In some homes, even fermented bamboo shoots are added for a traditional, tangy touch.

🥗 Fresh Vegetable Salad (Arunachal Style)

🛒 Ingredients 

  • 1 small cucumber (chopped or sliced)

  • 1 tomato (chopped)

  • 1 small carrot (grated or chopped)

  • 1 small onion (thinly sliced)

  • 1 small radish (optional, grated or chopped)

  • 1 green chili (finely chopped, optional – only if you like it spicy)

  • A handful of fresh spinach or lettuce (washed and torn into pieces)

  • A few slices of beetroot or boiled cabbage (optional)

  • A small piece of fermented bamboo shoot (optional – for a local, tangy flavor)

How to Make It:

  1. First, wash all the vegetables well and cut them into small, bite-sized pieces.

  2. In a bowl, mix together the cucumber, tomato, onion, carrot, and any other veggies you want to include.

  3. Add the green chili if you want a little heat.

  4. Squeeze in the lemon juice, and sprinkle in a bit of salt to bring out the flavors.

  5. (Optional) Add a little mustard oil if you enjoy that bold, local taste.

  6. Mix everything well using a spoon—or clean hands if you prefer!

  7. Top it off with sesame seeds or herbs if you like.

Serve the salad right away, with your meal. It goes really well with rice, boiled vegetables, or meat dishes, and adds a fresh, crunchy bite to your plate.
